Designed to bring a fresh bar-led perspective to the table, the collaboration introduces dishes that are playful, vibrant and made to spark conversation.
At Mobius Bar & Grill, the story unfolds through a menu shaped by bold flavour, shared energy and the kind of dining that feels best discovered over a drink and a few plates. It is a collaboration grounded in Chef Nat Thaipun’s distinctive point of view, brought into the Pullman Sydney Airport setting in a way that feels social, contemporary and just a little unexpected.

At Pullman Sydney Airport, the collaboration comes to life through a limited menu available at Mobius Bar, featuring a selection of dishes created as part of the Taste Different campaign. Current menu highlights include:
- Freshly shucked oysters with coconut dressing
- Watermelon larb
- Satay bread
- Lamb ribs
Guests can choose individual dishes, a $56 per person 4-course menu, or a $90 shared 4-course menu, making it easy to drop in for drinks and a few plates or settle in for a more generous dining experience.
