Pullman Sydney Airport is now serving a new dining collaboration created as part of Pullman’s new culinary partnership with award-winning Australian chef Nat Thaipun. Designed to bring a fresh bar-led perspective to the table, the collaboration introduces dishes that are playful, vibrant and made to spark conversation.

At Mobius Bar & Grill, the story unfolds through a menu shaped by bold flavour, shared energy and the kind of dining that feels best discovered over a drink and a few plates. It is a collaboration grounded in Chef Nat Thaipun’s distinctive point of view, brought into the Pullman Sydney Airport setting in a way that feels social, contemporary and just a little unexpected.

Now Available at Mobius Bar & Grill

At Pullman Sydney Airport, the collaboration comes to life through a limited menu available at Mobius Bar, featuring a selection of dishes created as part of the Taste Different campaign. Current menu highlights include:

  • Freshly shucked oysters with coconut dressing
  • Watermelon larb
  • Satay bread
  • Lamb ribs

Guests can choose individual dishes, a $56 per person 4-course menu, or a $90 shared 4-course menu, making it easy to drop in for drinks and a few plates or settle in for a more generous dining experience.

Born in Australia to Thai parents, Chef Nat Thaipun grew up between cultures, an experience that continues to shape her approach to flavour, creativity and storytelling through food. After winning MasterChef Australia in 2024, she went on to build a wider culinary profile through her food and travel content and the release of her first cookbook.

Chef Nat Thaipun’s partnership with Pullman brings together a bold culinary point of view and a dining style shaped by movement, flavour and discovery. More than a menu, it opens up a way of eating that feels social, expressive and worth settling into.
